Today’s recipe is very simple and a favorite of generally all people I think. Who didn’t like egg curry. And it’s a friendly recipe for bachelors. My hubby likes dry egg masala and I love egg gravy. Egg curry has several styles to make. I give you one of them…soon I’ll share various types of egg curry with you.
So let’s read the recipe below –

Step wise with pictures –

Heat oil in a pan and add a pinch of turmeric powder in it then put the hard-boiled eggs. After adding eggs add a pinch of salt. Then fry them till golden then take them out.

Prepare the ingredients for masala.

Heat oil in a pan (you can use the same) and put the sliced onion. Saute it. Fry till golden brown.

Add turmeric powder, cumin powder, and red chili powder into it after onion became golden.

After raw smell of ginger garlic is gone add a little bit of water and then add tomatoes.sprinkle pinch of salt.

Masala is done. It releases a delicious aroma.

Add two boiled potato into it.

Add a cup of water and adjust salt. When the gravy starts bubbling put the fried eggs into it. And sprinkle garam masala. I have added one diced tomato till half-cooked at the last time after potato. if you wish you can add also.

Egg curry is done. Serve with hot steamed rice.

Ingredients:
- Hard boiled Eggs – 4
- Boiled potatoes – 2
- Onion – 1 large (chopped)
- Ginger garlic paste – 1 tbsp
- Tomato – 1 large (chopped)
- Turmeric powder – 1 tbsp
- Chili powder – 1 tbsp
- Cumin powder – 1 tsp
- Garam masala – 1 tsp
- Salt – as per taste
- Oil – 3 tbsp
Instructions:
- Boil the eggs in medium flame till 10 minutes. Then take it out and put in ice water and peel the cell.
- Boil 2 potatoes .peel them and dice them and keep aside.
- Now puke the eggs through a toothpick and coat them with a pinch of turmeric powder and a pinch of salt.
- now heat oil in a pan and fry the eggs till golden red. Then take out.
- In the remaining oil put the onion and saute it.
- After onion transform to golden brown add ginger garlic paste and powder masalas and Saute it till 2 minutes. Then add 1/2 cup of water and cook till 2 minutes with cover lid.
- Then add the tomatoes and pinch of salt .stir it and cook till tomatoes became mushy.
- When raw smell of masala is gone add the diced boiled potatoes.
- Add 1 cup of water. When water starts bubbling add the eggs and adjust salt. Put slits green chili and sprinkle garam masala.cover and cook for 2 minutes.
- Serve with hot steamed rice.
